Scott’s beef bangers are the best!
DALBEATTIE butchers TH Carson have reclaimed the title for the best beef bangers in the south-west of Scotland. Delighted owner Scott Carson credits his late grandfather’s recipe for securing the south-west regional championship in the Scottish Craft Butchers (SCB) Beef Link Sausage Championship 2026. He said: “We last lifted the regional title in 2022, so it’s great to see the honour return to Dalbeattie. “It’s really rewarding to see our beef links consistently win favour with the judges with a recipe that is virtually unchanged since 1931. I learned how to make them at my father and grandfather’s knee and am still turning them out the same way. “There’s no great secret to its success other than using the very best quality ingredients. We never scrimp on quality – our customers expect and enjoy the best.” A third-generation butcher, Scott, who started work with the family business nearly 40 years ago, explained that locally sourced beef flank was always used for the links, mixed with their own seasoning and packed in natural casings. “It’s a real meaty sausage, and the whole team is chuffed that it’s brought us another regional title. It gives everyone a boost,” he added. “Even my old dad Stewart, now 88, is delighted that the family recipe – with its own special touches – is back to winning ways.” Gordon King, executive manager of Scottish Craft Butchers, said the competition had brought together some of the finest producers in the country, commenting: “Every butcher wants to secure accolades for beef link sausages.This is a title everyone is chasing. “Scott and his team have perfected a well-filled sausage with good colour, great texture, consistency and a phenomenal taste – a very worthy regional winner.”
